Technical and further education (TAFE) schools help an apprentice chef gain relevant training by partnering with the business sector. TAFE courses offer a good training ground for aspiring chefs who have no resources to complete a bachelor’s degree.
TAFE courses are mostly vocational training programs that focus on practical skills and on-the-job training. As part of apprentice cook training, students will work in the special pastry section of hotels or at stand-along bakeries. Units gained from this course can be credited into diploma in hospitality management and related disciplines.
Food Processing (Baking)
This course may last for up to one school year. It covers retail baking operations like bread making, pastry cookery, cake, food safety programs, specialist breads and food decoration.
Under this course, students will gain specialized knowledge in Asian cuisines. The apprentice cook training will prepare students for work in the Asian cuisine sections of hotels or ethnic restaurants. This course can be accredited as a partial fulfillment of level-IV certificate in hospitality studies.
This special course focuses on Italian dishes. As part of apprentice chef training, students will get a chance to work in Italian restaurants or specialty sections of hotels. This course is ideal for those who want to gain expertise in specialised fields.
Advanced Diploma and Associate Degree in Hospitality Management
If you are an apprentice chef who wants to pursue supervisory roles, you should take either of these courses. Each covers hotel and restaurant operations other than culinary arts. Students will learn event management, food and beverage management, relevant law and government policy, and accounting. These courses open up opportunities to assume supervisory roles like hotel general manager, food and beverage director and restaurant manager.
